"Authentic" gets thrown around a lot in restaurant marketing. Let's be specific. Our masalas are ground in-house, our dal simmers for hours, and our chefs come from Indian kitchens, not culinary schools that watered the cuisine down. That said, we're not rigid about it either. Bali has its own produce and its own rhythm, and our Indian cuisine works with that. Fresh coconut, local chilies, and seafood from nearby markets show up on a few dishes.

We're also a solid pick as a vegan Indian restaurant. We can swap ghee and cream for plant-based alternatives in most curries, and a few dishes are vegan from the start. Gluten-free options work too, since most curries and rice dishes qualify naturally, it's mainly the bread that needs a substitute.
